

Pita Bread makes an excellent base for mini pizzas. Brush the pitas with Olive Oil, Sprinkle with sea salt and a small bit of oregano and toast lightly in the oven. Then they’re ready to top with sauce, cheese and pepperoni or whatever toppings you prefer. Put back into the oven until cheese is melted and bubbly.
Another favorite pizza is a variation from a previous recipe. Slice a large red onion, and saute in a hot pan with 1-2 tablespoons of olive oil and a tsp salt. Once the onions have begun to caramelize, add 2 TBS of Balsamic Vinegar. And continue cooking until the balsamic reduces and the onions are caramelized. Top your toasted pita with a thin slice of fresh mozzarella, the warm balsamic onion mixture, crushed toasted pine nuts and crumbled goat cheese. Put back into the oven for approximately 5 minutes or until the goat cheese has softened. We promise the adults at your event will appreciate a little grown up food!
